No. Boiling potatoes before roasting is a waste of time and nutrition. During boiling some water soluble vitamins are lost in water. That’s why you should put the  potatoes in the air fryer or oven without boiling them when making roasted potatoes.

Should I soak potatoes in water before roasting?

No. You do not need to soak potatoes in water to make roasted potatoes. It is advised in some recipes because soaking potatoes in cold water prevents them from browning too fast, but you do not need to do this when you are making roasted potatoes in the air fryer.

Why are my roasted potatoes not crispy?

Sometimes excessive starch on the outside of the potatoes can prevent them from being crispy. You can wash the potatoes after cutting them to get rid of the excessive starch.
